Exchange can run on a server cluster. This technic is refered to as running a virtual server. You have two or more servers connected in a cluster, but the clients see only one.

For any info on exchange I can recommend www.petri.co.il. Daniel Petri is a MVP on exchange.

Well I think that is just a small piece of it. You can different Exchange virtual servers for different protocols such as POP, IMAP, SMTP etc. You can also have more than one SMTP virtual servers handle different domain names so you could have certforums.co.uk on one and microsoft.com on the other. I also would recommend Petri's site, msexchange.org is another good one as well.
